<p>Since the return of indoor dining in San Francisco, one of State Bird Provisions&#8217; most endearing qualities has conspicuously been missing from its dining room — dim sum-style service.  Now, the wait for those three-layered carts on wheels and gray, hand-held trays is finally over. </p>
<p>&#8220;Returning to dim sum style service is a return to our identity,&#8221; said Stuart Brioza, chef and co-owner of State Bird Provisions.  “At this point, most of our team has yet to experience the buzz and energy of State Bird Provisions with the carts and trays in service.  So it&#8217;s new, just like outdoor dining was a couple of years ago.”</p>
<p>State Bird Provisions opened in 2012 and received instant recognition for its food, but also for its “innovative format” and “uncommon” service style.  While there is nothing uncommon about this style of service in China or dim sum restaurants across the world, State Bird Provisions was one of the first to bring the push-cart style dining experience to a white-owned, American restaurant.</p>
<p>For those who don&#8217;t know, dim sum-style service offers multiple options of small-bite foods cooked in a &#8220;pre-ordered&#8221; fashion so there is less delay.  These dim sum carts are pushed around the dining room enticing customers with their many aromas and flavors.</p>

<p>Most of the time, diners at Chinese dim sum restaurants will place a checkmark next to all of the items they want to try at the beginning of the meal.  Various carts carry different items.  Next, the waiters roll the carts to each table and place the selected items from that cart in the center of the table before the next cart comes around. </p>
<p>For example, one cart might be piled high with steaming baskets filled with siu mai, while another is solely dedicated to xiao long bao.  As the carts roam around the restaurant like ghosts in a game of Pac-Man, the cart-pushers will serve your items as they pass your table.  And if you ordered siu mai or xiao long bao or (most likely) both, now you can feel like Pac-Man and chomp mindlessly, but happily. </p>
<p>At State Bird Provisions, half of the menu is pushed around on carts, so when one arrives at your table, you can decide whether or not to try something familiar or something new.  Some of the most popular dishes are the sourdough-sauerkraut pecorino and ricotta pancakes, the CA state bird with provisions and the peanut muscovado milk for dessert.</p>

<p>After being closed for a year due to the pandemic, the restaurant reopened in 2021, but changed their concept to a more traditional style to meet the needs of changing landscape.</p>
<p>&#8220;The idea of ​​running dinner with the carts and trays during the past year wasn&#8217;t comfortable for our team or our guests,&#8221; Brioza told SFGATE.  &#8220;We also found that we could make the same dishes and still be a dynamic restaurant — but the spirit of State Bird was missing.&#8221;</p>
<p>The return to its dim sum-style roots also signals a change for the kitchen team, as they pivot to new cooking methods and learn to pace orders accordingly.</p>
<p>&#8220;Everything is different,&#8221; Brioza said.  &#8220;We are cooking in batches and changing our stance to an offensive role in getting food out to the guests versus waiting for orders to come to us.&#8221;</p>
<p>Executive chef Gabby Maeda agrees, and said bringing back dim sum-style service only adds to the overall experience at State Bird Provisions.</p>
<p>&#8220;The kitchen team has more responsibility, they are on their own station and must be self-motivated,&#8221; she said.  &#8220;I&#8217;m excited for the kitchen to become reintegrated in service and connect with our guests in ways that they&#8217;ve not been these past two years.&#8221;</p>
<p>State Bird Provisions is located at 1529 Fillmore St., San Francisco.  It&#8217;s open 5 to 10 pm, Tuesday through Saturday.</p>

<p>	Nicolas Dromard has worked his way up from the ensemble to the lead role in two high-profile musicals: Wicked, in which he jumped from swing on the first national tour to an acclaimed run as Fiyero in the San Francisco production, and Mary Poppins, in which he jumped from swing in the original Broadway cast to a star-turn as Mary&#8217;s chimney sweep buddy Bert.  When the show ends on March 3, Broadway.com had a chat with the Canadian-born actor about his emerging career and dream role.</p>
<p>How does it feel to come full circle with Mary Poppins and end the Broadway run as Bert?<br />
	Great!  It&#8217;s such an honor.  At first we were shocked and saddened that the show was coming to an end, but six and a half years on Broadway is a great run.  The show has an incredible message and it makes the audience so happy.  It&#8217;s a privilege to say I was the last Bert on Broadway.</p>
<p>What is fun about playing Bert?<br />
	I think Bert is one of the best male roles on Broadway.  He is the narrator, he sets the mood and he is omnipresent &#8211; he is constantly on stage and dancing.  What other role can you dance on the ceiling in?</p>
<p>To the right!  What is this moment like? <br />
	It&#8217;s a roller coaster ride.  “Step In Time” is my favorite part of the show.  There&#8217;s an adrenaline rush and I get butterflies in my stomach every time.  They trap me and I just do it.  It&#8217;s such an impressive stunt: I go up a wall and 30 seconds later I&#8217;m back down.  It&#8217;s over so fast!  I wish it was longer.</p>
<p>You danced on ceilings all over America.  Does the New Amsterdam Theater feel different?<br />
	The set is different on tour &#8211; the Banks house opens up like a pop-up book, unlike the Broadway set which is a three story house!  But coming back to New York was like riding a bike again.</p>
<p>What memories do you have of playing Fiyero in Wicked&#8217;s San Francisco Company?<br />
	It was so much fun.  In 2009 I left Poppins on Broadway to join Wicked.  Fiyero is a dream role because you can kiss the blonde, kiss the green, swing on a rope and bow!  Bert is a beast compared to Fiyero.  It&#8217;s very physical.</p>
<p>You were also on The Boy From Oz ten years ago. Any good Hugh Jackman stories for us?<br />
	He&#8217;s just great and I want to work with him again.  He&#8217;s so excited;  I&#8217;ve never seen anyone work that hard before.  And his dressing room was always open &#8211; when your mom and dad came backstage after the show, he chatted with them.</p>
<p>	You were born and raised in Ottawa, Canada and didn&#8217;t speak English until you were seven.  Are you still fluent in French? <br />
	Oh yes, with my family.  My grandmother doesn&#8217;t speak a word of English, but my parents do.  You translated for the Canadian government.</p>
<p>At what age did you lose your French accent?<br />
	I still have a slight French accent, but I can hide it.  It still comes out when I&#8217;m tired or have had a glass or two of wine.</p>
<p>You&#8217;ve played squeaky clean roles for quite a while now.  Desire to be bad? <br />
	Naturally!  I would love to play in Jersey Boys and play Tommy DeVito.    </p>

<p>Several teams are in the mix to land receiver Julio Jones of the Atlanta Falcons, who said last week he wanted a fresh start before the 2021 season. The Tennessee Titans reportedly emerged as favorites to take the All-Pro pass catcher land, but ESPN-NFL reporter Jeremy Fowler said another team is on the verge of a final deal.</p>
<p><span>&#8220;From what I hear, something could go wrong on Wednesday,&#8221; Fowler said on ESPN&#8217;s Get Up.  &#8220;The team I hear most of all are the San Francisco 49ers. They have a cap of $ 20 million. They hear Titans, Aries, and Seahawks. A sleeper here is the Baltimore Ravens, too, and I was told that they are ready to get involved when it is at the right price. &#8220;</span></p>
<p><span/>The right price is the all-important question here, as the Hawks have reportedly requested a first-round pick for Jones. <span>The Hawks can save $ 15 million by trading the superstar after June 1.  This could get them back the funds they need to sign the 2021 NFL Draft Class and potentially sign additional veteran aid.</span></p>
<p>New general manager Terry Fontenot said ahead of the 2021 NFL draft that they have made offers.  When Jones is traded, he wants to make sure it&#8217;s best for the team.</p>
<p>&#8220;Obviously we value this particular player very much,&#8221; Fontenot told local Atlanta television station FOX 5.  &#8220;He is special, what he has done and what he continues to do here.&#8221;  But we have to consider all the players if it is right for the team because we have to do what is best for this organization.  &#8220;</p>
<p>What Atlanta can get in return will ultimately determine whether a deal is closed.</p>
<p>&#8220;The Hawks are aiming for a first round selection, but it&#8217;s not a slam dunk that they get it,&#8221; said Fowler.  &#8220;The team could ask one (trading partner) to provide some of those $ 15 million guarantees. You need to find a sweet spot to get this to work. It&#8217;s an arms race in NFC West and they must do everything possible to bring the best player into position. &#8220;</p>
<p>Dominique Foxworth believes the 49ers are the best fit for Jones.</p>
<p><span>&#8220;You have a group of very good recipients,<span class="Apple-converted-space"> </span>But they have no one as great as Julio Jones, ”said Foxworth on Monday.  &#8220;It takes this offense to another level with someone on the fringes like Julio Jones. Julio is pretty comfortable with Kyle Shanahan. Julio would be.&#8221;<span class="Apple-converted-space"> </span>in a great situation because he wouldn&#8217;t have to lay the offense on his back.  &#8220;</span></p>

<p>Also on May 3, Sebastopol Police Services announced in a Facebook post that a bear was discovered in the Pleasant Hill Rd., Lynch Rd. Area.  and Robinson Rd., about 18 miles from W. Cotati Ave.  away.  Police said the image of a bear came from a camera near Hessel Road, about halfway between the two locations.</p>
<p>It was not known if the bear was the same in each location.</p>
