<p class="responsiveNews">    ANN SACKS San Francisco presents itself in a gallery-like setting in the heart of the San Francisco Design District, a renowned destination for retailers and design-conscious consumers for over a century.  With window sills at the front of the building that offer plenty of natural light and an open floor plan that allows for a smooth flow of traffic and an unobstructed view of the designs, ANN SACKS San Francisco presents an active, engaging environment with all the tools and an experienced sales representative, in order to seamlessly implement a project from concept to the smallest detail into reality.</p>
<p class="responsiveNews">The exterior of the red brick showroom with its towering 18-foot lattice windows leads across the street-level entrance of ANN SACKS San Francisco and offers a first glimpse of the redesign, which begins with an open, lobby-style retail lounge.  From floor to ceiling, pillars wrapped in marble are overlaid with smaller tile slabs, which give dimensions and a structural effect, while at the same time offering visitors a unique opportunity to present the impressive selection of natural stones. The linchpin within the showroom is the new ANN SACKS Design Studio, a fully equipped activity center from a single source that is well organized to bring all the tools you need together in one central location.  Spacious Calcatta Zebrino marble work tables with plenty of seating are surrounded by walls of white shelves that approx. Better imagine what the tile will look like in a room. <p class="body-text">&#8220;I wanted to feel like I was living in a country house in the middle of England.&#8221;  Emphasis on feeling.  Michelle L. Morby &#8211; painter, photographer, and stationery enthusiast &#8211; actually planned a rebirth of the tiny kitchen in her San Francisco home.  An enclosed conservatory at the rear was torn out to make room (the former kitchen, one room away, was converted into a hidden guest toilet to fix the <a class="wpil_keyword_link" href="https://losgatosnewsandevents.com/san-francisco-recycled-water-program-is-performative-environmentalism/"   title="plumbing" data-wpil-keyword-link="linked">plumbing</a>.) Designer Lynn Kloythanomsup from Landed Interiors &#038; Homes brought together countless contemporary details to make the fantasy come true.  And the house cooperated. </p>
<p>			<span class="lqip lazyload" data-expand="2000" data-lqip="https://hips.hearstapps.com/hmg-prod.s3.amazonaws.com/images/screen-shot-2021-07-23-at-5-45-36-pm-1627076749.png?resize=480:*&#038;frame=1&#038;lqip=yes"/></p>
<p class="body-text">“It&#8217;s a craft house from 1914,” explains Kloythanomsup. <strong>&#8220;It&#8217;s kind of a loose language, so it was just about how you can make it more country.&#8221;</strong> A potpourri of materials conjures up the “dilapidated” atmosphere that Morby wanted, but still feels classy and durable: lacquered wooden floors, built-in cupboards, exposed bricks, nickel fittings, a custom plate rack inspired by Downton Abbey and Calacatta marble in an elegant .  ends offset Dupont edge.  An antique Swedish butcher&#8217;s block on casters has been rolled up to be used exactly as its maker intended. </p>

<p>		An artist friend of the homeowner Michelle L. Morby, Jonathan Anzalone, made the combination of drying rack and shelf from a piece of reclaimed maple.</p>

<p class="body-text">To keep the room tidy, the refrigerator was moved to an adjoining (and spacious) hallway, which also houses the walk-in pantry.  Morby can now bring groceries through her front door and drop it off in this &#8220;Pantry Hall&#8221; without messing up the kitchen.  Additionally, what looks like a bookcase in the hallway is actually a Murphy door that swings open to reveal the hidden powder room. </p>
<p class="body-text">The kitchen is not huge, but it is supposed to be teeming with food and guests.  A small sewing table and built-in banquet seat provide just enough space for someone to sit and help prepare dinner &#8211; or just keep Morby company while she does something wonderful &#8211; but more are always happier.  &#8220;She always has friends and cooks,&#8221; says Kloythanomsup.  &#8220;She loves to have an artist salon.&#8221;  </p>

<p class="body-text">For the walls, the designer chose a classic red brick, but since it was only for the look, it went wrong.  “It&#8217;s like a thin brick tile,” she explains.</p>

<p>&#8220;We&#8217;re much better,&#8221; says Reyna Maldonado.  La Guerrera&#8217;s Kitchen, the restaurant and catering company that Maldonado runs with her mother Ofelia Barajas, went through a lot in 2020.  Unlike many other companies, the pandemic chaos emerged somewhat triumphant.  In March 2020, as the pandemic intensified, their Fruitvale location, which has been celebrated by fans since opening in 2019, closed to be reborn in Old Oakland later that year.  In between, there was a very pandemic move &#8211; a series of pop-ups at Fruitvale&#8217;s Ale Industries that helped keep the business afloat.  However, towards the end of this year there will be another change, and another positive one;  La Guerrera&#8217;s will move again and join the sellers on the Schwanenmarkt.  The opening is an important step for the family business and positions it in its most visible place to date. </p>
<p>The Guerrero region of Mexico is home to both beaches and mountains, and their cuisine is a unique blend of fluffy fish dishes and hearty, calming meat dishes.  La Guerrera&#8217;s Kitchen&#8217;s current menu is a vivid display of this wealth and diversity, from seviches to barbacoa plates.  But it wasn&#8217;t always like that &#8211; as an immigrant from Mexico, Barajas worked as a street vendor for years, selling a limited selection of tamales from a cart in San Francisco. </p>
<p>“When my mother came to San Francisco in 1996, we were living in shared apartments with other people and she was working a lot,” says Maldonado, who was six when her family moved to the United States.  &#8220;It took me a long time to get used to this new life.&#8221; </p>
<p>Now the tamales &#8211; under the Maiz Warrior brand, which means Barajas&#8217; longstanding commitment to all corn &#8211; are part of the restaurant, which it wasn&#8217;t easy to get to.  Despite her growing customer base and community connections, Barajas&#8217; venture was often sidelined by the police during her days as a street vendor.  After graduating from college, Maldonado decided to devote himself to growing her mother&#8217;s business and both enrolled in the La Cocina Incubator program, which works with emerging culinary entrepreneurs, many of whom come from historically underrepresented groups.  Mother and daughter took finance, marketing, and operations courses together, and the program encouraged them to start a brick and mortar store. </p>
<p>“Entrepreneurship is natural for my mother and I was able to use the skills I learned in college,” said Maldonado.  Moving from the Mission District in San Francisco, where Barajas had worked for over 20 years, to the Fruitvale neighborhood in Oakland was imbued with imagery that Maldonado couldn&#8217;t miss: “During our last years in the mission, we had a tough time dealing with gentrification &#8220;, she said.  &#8220;Oakland has given us this familiar community style, there is a lot of history there that we understand and respect.&#8221; </p>
<p>Barajas adds, “The Bay Area has changed.  I&#8217;ve seen my neighbors move out of our churches.  But we hope to continue creating safe spaces for our community to enjoy food and laughter. &#8221; </p>
<p>This coming fall, La Guerrera&#8217;s Kitchen will close its Old Oakland location and move to Swan&#8217;s Market in the closed Cosecha area.  Dominica Rice-Sisneros, the cook behind Cosecha and the recently opened Bombera in Oakland&#8217;s Dimond neighborhood, connected Maldonado and Barajas to the market, and since their current Old Oakland lease was short, they chose to do so. </p>
<p>&#8220;My grandparents all grew their crops and sold them in the local market, and we spent a lot of time there, so the market environment really feels like going back to our childhood,&#8221; said Maldonado.  “And partnering with and getting to know other women owned and Latinx owned companies!  It&#8217;s exciting to be by your side. &#8221;  </p>
<p>For Barajas it is another symbol of stability: “Going from street sales to stationary retail means having a team and feeling safe as an entrepreneur here in this country,” she says. </p>
<p>Preparations for the move are underway and with it more offers will come than La Guerrera has ever seen before.  Since there is a larger kitchen in the new room, Maldonado is talking about expanding the menu while staying true to the Guerrero cuisine.  The dishes will remain deeply traditional for the region, using native herbs and plants such as yerba buena, epazote and bajio chilli.  The labor-intensive mole will remain on the menu, but new dishes will emerge and the selection of drinks will expand.  </p>
<p>&#8220;I can&#8217;t tell you how many times we&#8217;ve been asked to sell burritos, but it&#8217;s important for us to stay true to our roots,&#8221; said Maldonado.  &#8220;There&#8217;s been a lot of interesting discussion about where the burrito came from, but we just didn&#8217;t grow up with burritos in Guerrero so we don&#8217;t sell it.&#8221; </p>
<p>Despite all the changes, La Guerrera&#8217;s Kitchen has remained loyal to another plus point &#8211; a family business.  Maldonado&#8217;s father and sisters are also involved in the restaurant while she is busy with catering, which has been growing in recent months.  “Working with my daughters and my family brought us all together,” said Barajas.  &#8220;We laugh a lot at our team meetings and check-ins.&#8221; </p>

<p class="b_o_d_y__t_e_x_t">I spilled a drink to Alice Waters.</p>
<p class="b_o_d_y__t_e_x_t">As was to be expected, she was kind to it.  The chef, restaurant owner and slow food pioneer who teaches public school children to grow their own food is a forgiving person.</p>
<p class="b_o_d_y__t_e_x_t">We went to Zuni Cafe on Market Street in San Francisco a few years ago and it was bullied.  Husband Eric and I couldn&#8217;t make a reservation and took our risk and showed up.  Luck was with us: if we were willing to wait a bit, they could sit us down.  I moved away from the bar, drinking in each hand as the crowd moved &#8211; and so did Eric&#8217;s martini.  I apologized profusely.  We both went on.</p>
<p class="b_o_d_y__t_e_x_t">&#8220;Do you know who that was?&#8221;  asked a passing server.  Oops.  But points out to Alice that she is nice to it.</p>
<p class="b_o_d_y__t_e_x_t">Eric and I were there for Zuni Chicken and Bread Salad, an incomparable meal for two.  A small bird is roasted over very high heat in the massive stone oven in the middle of the dining room.  You have to wait;  Your chicken is cooked to order.  But you don&#8217;t care.  It&#8217;s one of those things that can&#8217;t be improved and that you can&#8217;t find anywhere else.</p>
<p class="b_o_d_y__t_e_x_t">The Zuni Cafe Cookbook, written by Judy Rodgers and published by Norton, appeared under the Christmas tree after that visit, and I flipped directly to page 342, where the recipe for the famous dish begins and continues over the next four pages.</p>
<p class="b_o_d_y__t_e_x_t">I found notes from a visit on the back of a Crocker Street bank ATM slip tucked into the cookbook: “Friday at 5:30 am, every table full.  Yellow walls and ceiling, wooden tables and chairs.  &#8220;</p>
<p class="b_o_d_y__t_e_x_t">It explains that Zuni fried chicken depends on three things, most importantly the small size of the bird.  They recommend a 2 3/4 to 3 1/2 pound bird that was formerly known as a deep fryer.  This is not easy to find these days as most birds of this size are intended for rotisserie and are sold cooked.  Second, it has to roast on a very high heat.  At home that would be at least 450 degrees.  Lastly, the bird needs to be salted at least 24 hours in advance to improve the taste and keep it moist and tender.</p>
<p class="b_o_d_y__t_e_x_t">The chicken pieces are then embedded in a warm baby greens salad with pieces of rustic bread, garlic, spring onions, currants and pine nuts with vinaigrette and chicken drops.  You can&#8217;t replicate the San Francisco bread, but the book recommends a &#8220;tough, peasant bread&#8221; that&#8217;s at least a day old.</p>
<p class="b_o_d_y__t_e_x_t">Here are the instructions in broad terms:</p>
<p class="b_o_d_y__t_e_x_t">Wash and pat the chicken dry, shove twigs under the skin with fresh herbs.  Season with plenty of sea salt (kosher would do.)</p>
<p class="b_o_d_y__t_e_x_t">Remove the crust and break the bread into large pieces, brush everything with olive oil and roast, turn crispy and color all surfaces.  Tear the pieces into irregular pieces large and small and get dressed.  Try &#8211; and try not to eat everything.</p>
<p class="b_o_d_y__t_e_x_t">Preheat a shallow skillet or ovenproof pan over the stove over medium heat.  Pat the chicken dry and place in the hot pan, raise the breast and place in the preheated oven.</p>
<p class="b_o_d_y__t_e_x_t">The chicken needs to sizzle and if 450 degrees doesn&#8217;t, turn the oven over to 500. The skin should blister.  Turn it over in half.  The total cooking time should be 45 minutes to an hour.</p>
<p class="b_o_d_y__t_e_x_t">In the meantime, fry the garlic and shallots in olive oil and roast the pine nuts.  Mix with vegetables, bread and currants.  Adjust seasonings and spices.</p>
<p class="b_o_d_y__t_e_x_t">Combine the chicken and serve on a platter over the salad.  Sky.</p>
<p class="b_o_d_y__t_e_x_t">I&#8217;ve done it with Murray&#8217;s wonderful free range chickens and got pretty good results.  I don&#8217;t have a brick oven or San Francisco yeast bread.</p>
<p class="b_o_d_y__t_e_x_t">It&#8217;s harder than it sounds and the oven made a mess.  But it was delicious, if not exactly authentic, and it brought back memories of the packed bar on a busy Friday night and spilled a drink on the famous chef.</p>
