So you've heard of a cat or owl cafe and can imagine the appeal, right?

Well, this new pop-up animal cafe might be a little harder to understand.

A rat cafe is opening in San Francisco where you can enjoy a coffee and a breakfast pastry for $49.99 surrounded by, well, lots of furry rodents.

This is certainly unusual, as you'd normally expect to be given money when you spot a rat in a restaurant and not hand it over – but it makes a lot more sense considering where this new pop-up restaurant is opening.

The San Francisco Dungeon, an attraction that offers a live-action tour through 200 years of the city's “most thrilling” and “darkest” history, will house the cafe. And it definitely sounds like an experience.

“Guests can enjoy their coffee at bistro tables with pretty red and white gingham tablecloths… while being surrounded by live rats,” the Dungeon said.

This one is actually pretty cute.

The rats are provided by Rattie Ratz, an organization that rescues and rehabilitates pet rats – and “ambassador rats” will be on duty for the duration of the pop-up.

Your $50 pays for the full dungeon experience, where you'll learn about things like the California Gold Rush, the gangs of San Francisco, and even encounter more rats while learning about the Chinatown scourge.

So if a rat cafe is your thing, the pop-up is open between July 1st and 8th.

Keith Rutledge, a 25-year-old librarian's assistant in Houston, wanted to enjoy a relaxing evening on the town. He ate some Tex-Mex burritos and had a few drinks and then headed to the men's room at Sherlock's Pub.

Suddenly, his relaxing evening took an unpleasant turn. “Hello, sir,” a smartly dressed bathroom attendant said as Rutledge scurried into the stall. When he came out, the man squirted Dial soap into his hand and turned on the water for him. Rutledge knew he had to shell out a tip. “You could be dirty and a dollar richer,” Rutledge says, “but if you want to wash your hands, you have to go past him.”

Until recently, it seemed that restroom attendants – whose job is to stand around the bathrooms handing out everything from towels to mints – were going the same way as the chimney sweep. But more and more bars, restaurants and nightclubs are now hiring them to work both men's and women's restrooms – often to the chagrin of their embarrassed customers. Rutledge says even his favorite sports bar, Tavern on Gray, has stationed attendants in the restrooms.

Restroom attendants are seen everywhere from Milwaukee and Cincinnati to San Francisco. They can be found in national chains such as the House of Blues and Jillian's, a chain of 35 restaurants and arcades. And the demand for restroom attendants is creating an industry dedicated to staffing restrooms. Royal Flush, a New York-based company that specializes in placing restroom attendants, says it has hired restroom attendants at 10 establishments in the past year and a half and now has 40 such clients. Chazz Ward, a restroom attendant entrepreneur in Florence, Kentucky, has hired “lounge hosts” at 16 establishments and is now trying to franchise the business. Many bars and restaurants are trying to modernize the tradition by hiring attractive young restroom attendants and keeping their stations minimalist and not cluttered with toiletries.

Terrance Ward started out as a bathroom attendant at nightclubs in Ybor City, Florida, and now employs bathroom attendants at eight nightclubs and two restaurants in Milwaukee. On a good night, Ward can make as much as $150 in tips himself, he says. The rest of his time is devoted to running his bathroom attendant company, A Touch of Class, a job he says has become more difficult in recent months due to increased competition.

The rise in towel assistance can be explained in part by the fact that it is a cost-effective way to add flair to a venue. “It increases the perception of the club. It's a matter of prestige,” says David Van Kalsbeek, marketing manager at the MGM Grand hotel and casino in Las Vegas, which employs restroom attendants at both Studio 54 nightclub and Tabu Lounge. The attendants keep bathrooms clean throughout the night by collecting paper towels and wiping down sinks; they make sure toilets are unclogged and make sure toilet paper rolls are replenished. Mopping and scrubbing are usually done at the end of the night by a separate cleaning service.

Adam Jed, manager of the Matrix Fillmore, a nightclub in San Francisco, has hired a guard as part of his “broken window” theory. “If you allow the restrooms to get dingy, people will continue to treat your place that way,” he says. The extra pair of eyes, he says, “prevents illegal activity,” such as drug use. At Have a Nice Day Cafe, a retro '70s- and '80s-style nightclub in Milwaukee, the restroom guard stands guard to prevent even the smallest of things, like theft of toilet paper, says a manager.

Some customers are used to having privacy in the restroom and don't appreciate the extra help. They feel sorry for the people working there and are uncomfortable being watched. “The best analogy is waving away the guys trying to clean your windshield in traffic,” says Brooks Hamaker, a telemarketing manager in New Orleans.

Some restaurant owners are aware that guests don't like restroom attendants, but say they're taking a new approach that eliminates those drawbacks. Van Kalsbeek of the MGM Grand says, “There are those who turn the water on for you and try to dry your hands – we don't do that.” Rainer Zach, operations manager of the new Chicago nightclubs Y and Sound-Bar, says the restroom attendants at both establishments are good-looking, friendly people in their 20s. Their stations aren't cluttered. “The only thing they do,” Zach says, “is make sure the place is clean and hand you a towel.”

Chris Heilgeist, a 25-year-old film student and three-night-a-week guard at the Y, says he makes $200 to $250 a night, including minimum wage and tips. “It's only a bad job because people think so,” he says. His boss, Zach, says guards in the men's restrooms tend to make a little more than staff in the women's restrooms because men tend to tip more.

That doesn't mean it's always easy to retain staff. Crobar, another Chicago nightclub, also tried to staff its bathrooms with hip, young people when it reopened in October after a remodel. “They left,” says the manager. Management hired a longtime bathroom attendant from another venue to staff the place.

One reason owners are willing to offer a service that may not be well received by customers may be because it's cheap. Staffing agencies say every deal is different, but in some cases establishments pay as little as $20 a night to man a bathroom. Some employees are paid a small hourly wage. Others work only for tips. The most common tip is a dollar.

Kentucky entrepreneur Chazz Ward was working as a bouncer at a Jillian's near Cincinnati five years ago when he came up with the idea of ​​providing restroom attendants to the business. Today, his company, Black Tie Services, provides restrooms at 16 restaurants, clubs and entertainment centers in Northern Kentucky, Cincinnati and Indiana. His latest venture: franchising the business. He says he's negotiating with four potential franchisees across the country who want to get involved in the concept he developed. Ward has a theory, developed after spending “thousands of hours” in restrooms, about why people feel so uncomfortable having restroom attendants.

“People don't get enough respect in their everyday lives,” Ward says. Then, suddenly, they go into the bathroom and a lounge host pulls out towels, mints and the best cologne. “It's like someone has never been told they're loved, and when they get into a relationship, they're told they're loved,” he says.

Die Tänzerinnen waren früher als unabhängige Auftragnehmerinnen eingestuft und waren es gewohnt, jeden Abend nach Ende ihrer Schichten mit Bargeld – oft Hunderten von Dollar – aus den Clubtüren zu gehen. Das änderte sich schlagartig, als Clubs in der ganzen Stadt begannen, ein Urteil des Obersten Gerichtshofs von Kalifornien vom April in einer anderen Branche durchzusetzen, das neue Standards für die Bestimmung setzte, ob Arbeiter als Angestellte eingestuft werden sollten oder nicht.

Die Entscheidung hat die Gig Economy erschüttert, wirkt sich aber auch auf unerwartete Bereiche aus, etwa auf Friseursalons und die Erotikbranche, in denen Arbeitnehmer traditionell nicht als Angestellte gelten.

In den örtlichen Clubs führt die Umstellung auf Angestelltenstatus bei Tänzerinnen zu einem Exodus; viele von ihnen verlassen die Lokale in San Francisco.

Die Clubbesitzer sagen, dass die Änderungen auch für sie Kosten verursachen.

„Aufgrund der Klagen und der anhaltenden Forderungen der klagenden Tänzerinnen und ihrer Anwälte ist der Club nun jedoch per Gerichtsbeschluss gezwungen, die Möglichkeit der unabhängigen Auftragnehmerin abzuschaffen und alle Tänzerinnen zu Angestellten des Clubs zu verpflichten“, hieß es auf dem Schild.

Axel Sang, Marketingdirektor von BSC, bestätigte in einer E-Mail an den Examiner, dass die Tänzerinnen früher Vertragspartner gewesen seien, jetzt aber „Clubangestellte seien, die einen Stundenlohn und eine Provision auf Tanzverkäufe erhalten“.

„Die von BSC verwalteten Clubs erhalten jetzt zusätzlich zum Stundenlohn die entsprechenden Lohnsteuern, Arbeitslosenunterstützung, Arbeiterunfallversicherung, Kosten für Healthy San Francisco, Kosten für Affordable Care Insurance und Krankengeld für mehrere Hundert neue Entertainer“, schrieb er.

Er schätzte, dass 200 Tänzerinnen ihre Stelle in BSC-Clubs, darunter Penthouse und Gold Club, seit der Änderung in Kraft getreten sind, und sagte, die Änderung habe „dramatische Auswirkungen auf das Geschäft und die Rentabilität“ gehabt und koste die Clubs „mehrere Millionen Dollar“ pro Jahr.

Laut Harold Lichten von Lichten & Liss-Riordan, einer Anwaltskanzlei in Boston, die Uber-Fahrer vertritt, die behaupten, das Mitfahrunternehmen habe sie falsch eingestuft, gab es bereits vor dem Dynamex-Urteil Klagen wegen unsachgemäßer Einstufung exotischer Tänzerinnen.

„Wenn Sie jemanden fälschlicherweise als unabhängigen Auftragnehmer einstufen, müssen Sie weder Sozialversicherungsbeiträge noch Arbeitslosengeld, noch Mindestlohn oder Überstunden zahlen“, sagte Lichten und fügte hinzu, dass die Anreize für Unternehmen „unglaublich groß“ seien, „Menschen falsch einzustufen, weil sie so viel Geld auf Kosten der Arbeitnehmer sparen.“

Lichten sagte, das Dynamex-Urteil sei ein Hebel im laufenden Rechtsstreit mit Uber, und merkte an, es dürfte auch den Tänzerinnen zugute kommen, die nun Anspruch auf den gleichen Schutz hätten wie alle Arbeitnehmer.

„Die Sorge ist, dass einige Unternehmen die Beträge, die sie ihnen zahlen, senken könnten, um ihre Verluste auszugleichen“, sagte Lichten. „Das wäre bedauerlich. Aber insgesamt ist es viel besser, Angestellter zu sein, weil man gesetzlichen Schutz genießt.“

Die vom Examiner befragten Tänzerinnen sagten jedoch, dass ihnen die Neueinstufung zwar nun ein Anspruch auf Mindestlohn, Sozialleistungen und die Möglichkeit zur Gewerkschaftsbildung zustieße, sie jedoch mehr Schaden als Nutzen gebracht habe.

„Zwei Wochen lang hatte keines dieser Mädchen einen Scheck über 300 Dollar. Es herrschte große Aufregung. Viele Mädchen packten an diesem Abend ihre Sachen und gingen. Ich war eines dieser Mädchen“, sagte Darla.

„Ich kann für 15 Dollar die Stunde bei McDonald's arbeiten, muss meine Klamotten nicht ausziehen und muss mir nicht den ganzen Mist anhören, den ich als Tänzerin ertrage“, fügte Darla hinzu und bemerkte, dass alle Penthouse-Tänzer „überlegt haben, zu gehen“.

Die überwiegende Mehrheit der Stripclubs in San Francisco – 10 von 12 – gehören BSC Management oder werden von diesem Unternehmen verwaltet. Die einzigen Ausnahmen sind das Mitchell Brothers O'Farrell Theatre und The Crazy Horse.

Sang sagte, das Unternehmen zahle den Tänzern nicht mehr als den Mindestlohn, da sie „Provisionen auf Tanzverkäufe erhalten, die in den meisten Fällen den Stundenlohn weit übersteigen.“

Eine Tänzerin im Gold Club, die darum gebeten hatte, Mary genannt zu werden, sagte, es sei üblich gewesen, dass Tänzerinnen pro Schicht durchschnittlich Tänze im Wert von etwa 1.000 Dollar verkauften und 750 Dollar behielten.

Im Rahmen der neuen Provisionsstruktur des Gold Clubs behalten die Tänzerinnen allerdings nach eigenen Angaben von den ersten 150 Dollar, die sie bei Privattänzen verkaufen, nichts ein, von den nächsten 250 Dollar, die sie verkaufen, 40 Prozent und von den darüber hinausgehenden Verkäufen 60 Prozent.

Einige Tänzer sagten, sie müssten für die Anmietung des Privatraums zusätzlich eine Gebühr von 100 Dollar bezahlen.

Tänzerinnen im Gold Club sagten, dass sie für den ersten verkauften Privattanz einer halben Stunde jetzt nur noch 60 Dollar bekommen.

„Wenn ich einen Kunden 400 Dollar zahlen lasse und davon nur 60 Dollar sehe, ist das für mich unrealistisch“, sagte Mary. „Wir wollen unseren Job machen, und früher bestand unser Geschäft darin, Tänze zu verkaufen. TV's “Supernanny” may correct bad behavior, but only a nanny adds magical powers and flying with an umbrella to her repertoire.

The musical “Mary Poppins” opened yesterday at the Detroit Opera House and promises to delight children and adults alike through January 2nd.

Directed by producer Cameron Mackintosh, the Disney musical is based on the fantasy book series by PL Travers and the 1964 film starring Julie Andrews and Dick Van Dyke.

The popular childhood story follows a magical nanny who works for the hapless family of a cold banker and features popular songs such as “A Spoonful of Sugar,” “Chim Chim Cher-ee,” “Step in Time” and “Supercalifraglisticexpialidocious.”

New songs by Olivier Award winners George Stiles and Anthony Drewe also grace the stage production.

The show premiered in London's West End in 2004, with a Broadway counterpart premiering two years later.

It received seven Tony Award nominations, including Best Musical and Best Scenic Design.

A national tour began in Chicago in March 2009.

Nicolas Dromard takes on the role of chimney sweep Bert after spending the last 1 1/2 years as Fiyero in the San Francisco production of “Wicked.”

His enthusiasm for the plum part was evident during a recent telephone interview at a tour stop in Des Moines, Iowa.

“It’s such an incredible show,” Dromard said. “Of all the shows I have done, this is my favorite. I love performing it every night.”

He believes the timeless message speaks to everyone and still resonates today.

“Kids connect with the Disney magic and adults connect because they remember the movie,” he said.

“The story about the father trying to reconnect with his children and the mother feeling like she's lost her purpose – that's very timely, even though it's set in the early 20th century.”

The national tour is not Dromard's first foray into the role.

He was part of the original Broadway cast and understudy Bert before taking over the role of Gavin Lee.

While he realizes his performance will inevitably draw comparisons to Van Dyke's iconic performance, he's not worried about whether he can keep up.

“How great to have such a role model,” he said of the star. “I don’t try to copy anything he does, but rather put my own spin on it while staying true to the character.”

Born in Ottawa, Dromard began dancing at the age of six after being inspired by a film starring Fred Astaire and Ginger Rogers.

He studied music at De La Salle High School, a performing arts school in Ottawa, and participated in community theater and dance competitions in Canada and the United States.

After high school, he planned to study music in college, but while in New York City to compete in a dance competition finals, he auditioned for and booked “The Radio City Christmas Spectacular” in Branson, Missouri.

From there, his theater opportunities grew – “West Side Story” at the Stratford Festival in Canada, the North American premiere of “Mamma Mia,” “Oklahoma!” and “The Boy From Oz” on Broadway, “Hairspray” in Toronto, the first national Tour of “Wicked” and “Mary Poppins” on Broadway.

Dromard puts his talents to work in the role of the lovable Cockney Bert, taking the lead role in several songs, acting as narrator and dancing up a storm in the peppy number “Step in Time.”

“That’s my favorite number,” he said. “I get to knock upside down – how could you not like that?”

According to Dromard, new melodies, including Mary's introductory piece “Practically Perfect”, fit perfectly with the original numbers and flesh out the stories of the main characters.

“It's a perfect mix of favorite songs from the film and Travers' book and new songs that fit together so perfectly you'd think the entire score was written at the same time,” he said.

Bob Crowley's bizarre stage design provides a much-vaunted backdrop for the stage action.

“The tour set is incredible,” Dromard said. “We have a house that is more like a dollhouse or a pop-up book.

“It starts closed, then at the end of the show I come out and do a little intro and it comes to life.

“It is visually beautiful and amazes the mind.”

The magical world of “Mary Poppins” unfolds at the Detroit Opera House through January 2nd.

Most of us come to the coffee industry with a love of coffee. We love the ritual of dose, grind and brew. We love the scents and flavors and lingering sweetness of the cup. We learn to love cupping and the process of developing roast profiles to highlight the best possible expression of origin. Then, we fall in love with the romance of origin and the way different places, processes, climates and peoples bring new experiences and relationships to our lives. Above all, there are the people we serve — the heartfelt embrace of enhancing the start of a day or a gathering around a table to share coffee, experiences and ideas.

Behind all that, there’s the actual work of roasting — frequently dusty, smoky, and occasionally repetitious, batch after batch, bag after bag. Like it or not, the title “roastmaster” involves all the additional work you have to do in order to do the things you love. A big part of that is cleaning your roastery and maintaining your equipment.

Creating a Plan

Simple planning can make cleaning and maintenance easier, and the earlier you begin planning, the better. The first variable is real estate. Foot traffic is great for a coffee shop, but production roasting in densely populated areas can force you to use complex and expensive odor and emission mitigation systems that occupy space and require additional attention. Think about egress and ingress for delivery trucks and movement of pallets of coffee. Before you sign a lease, think about roaster exhaust, back pressure, makeup air, duct layout and cleaning, what your neighbors think about smoke and chaff, and what kind of a job you are creating for your chimney sweep.

Adequate square footage is essential. Wedging your roaster into a tiny space may initially make sense financially, but roasters and ducting can be hot, and operating industrial production machinery in compact spaces frequently makes operation, maintenance and cleaning more difficult and possibly even unsafe. Spilled green and roasted coffee underfoot creates the potential for slips and falls. Hot steel surfaces and rotating drums and cooling trays are not gentle places to catch yourself or land and, more specifically, the Occupational Safety and Health Administration (OSHA) has established clear regulations regarding the safety of your workplace.

Your business involves much more than simply roasting delicious coffee. Give yourself room to work.

Developing Standard Operating Procedures

Michael Ebert, owner of Chicago-based Firedancer Coffee Consultants, refers to the “holy trinity of risk management” — employee safety, food safety and quality. “They all feed into each other,” says Ebert, a certified Preventive Controls Qualified Individual (PCQI) and lead trainer for food safety.

In order to maintain quality, cleanliness and physical safety, you must develop separate sets of standard operating procedures (SOPs) and audit systems
for each operational area. This becomes essential as your roastery grows and you hire new employees. As the coffee industry has proven time and again, you never know when you’ll hit the jackpot and go from 100 pounds per week to more than 1,000. Ebert suggests establishing and implementing systems before it’s too late.

While the health inspector will come to the cafe, your roastery will have to comply with different standards and regulations. Having separate standards and plans for each branch of the trinity will not only help you maintain high standards, in many cases it’s required by law.

“You should build each plan separately, for the FDA [Food and Drug Administration] doesn’t care if your product tastes good or if employees lose an arm, just if your product will hurt the consumer,” says Ebert. “If you have other elements in any of these plans, it could show you don’t know what you are doing.”

Ebert is adamant about creating these processes when your roastery is still small, because by the time the business takes off, it’s required. He suggests beginning with your company mission, business goals, SOPs, training and documentation. Usable documentation of your policies, procedures and forms is necessary to ensure your company’s expert knowledge is retained, processes and procedures continue to be performed properly, and you can provide regulatory agencies with information regarding the conditions under which a specific product was created.

When implementing these plans, Ebert focuses on in-house audits, which will help you understand what tasks are being performed regularly and what is getting overlooked. Internal audits also can help you spot holes in production maintenance and standards throughout your operation, and will keep consumers and employees safer.

Food Safety

Coffee is a food product. People consume it. Back in the day, we brewed coffee at temperatures high enough to constitute a kill stage, meaning potentially harmful bacteria were destroyed in the brewing process. This made coffee a “low-risk” food product. The growing popularity of cold-brew and green coffee consumption has changed the way regulatory agencies view and regulate production. When planning your roastery, know that typical food processing facility standards apply. This includes complying with the standards included in the Food Safety Modernization Act (FSMA) — and keeping up with changes to the regulations as they occur.

Meeting food safety standards can seem daunting. Start with making a list of all the surfaces your coffee touches, known as “coffee contact surfaces.” Even light-roasted coffee contains oils that will transfer to surfaces and quickly go rancid. Sanitize all roasted coffee contact surfaces — such as scoops, measuring receptacles, bins, counters and scales — daily. While sanitizing, don’t forget to wipe down the greens hopper and cooling tray of the roaster with a mixture of bleach and water. Simple household cleaning products are not sufficient.

Consider your procedures for handling coffee. Keeping hair out of coffee is important; that means mandatory hats or hair nets and, for those with facial hair, beard nets. Good Manufacturing Practices (GMPs) are outlined by FSMA and dictate that you must have a documented program outlining your GMPs for both employees and visitors. These practices must include policies about removal of jewelry, appropriate clothing, and removal of loose objects to ensure both employee and food safety. Policies about where and when food can be consumed and a documented training program are just some of the GMPs outlined by the act. Your plan should begin with reviewing FSMA regulations. Next, you must register your facility and figure out how you will self-audit as prescribed by the act.

Employee Safety

Employee and human safety is inextricably linked to the other branches of Ebert’s trinity. Without physical safety standards, how can food safety and product quality be maintained? Rules must be established about who can enter the roastery, and visitors must adhere to the standards you set as well. Creating systems of accountability and traceability can save you from a lawsuit down the line. These safety standards range from simple protocols such as hand-washing standards to rules for what can be handled by employees and visitors, including touching equipment.

Making plans and adhering to established protocols for employee safety, while not necessarily directly impacting the quality of your coffee, can be the difference between a successful roastery and one that fails. Safety plans are also required by OSHA. These should be the first plans you establish and review with employees before setting foot in the roastery, and have your employees sign documents verifying that they have read and understand them.

For the health and safety of your staff, proper interior ventilation and air quality is mandatory. Common contaminants include green coffee dust, roasted coffee chaff, and even fumes from aggressive non-food-safe cleaning agents. That’s not to say your daily routine needs to include donning “Mission to Mars”-worthy personal protective equipment — not yet, anyway. For the majority of tasks, a face mask will do, but more thorough protection is necessary when employees come into contact with large amounts of contaminants, such as on major roaster cleaning days.

Be aware that coffee dust is a known allergen, and allergies can develop from exposure over time, so adequate protection is essential. Use respiratory face masks while moving green or grinding freshly roasted coffee. Ventilators to protect against diacetyl contamination for roasters and for flavoring areas are not yet required by OSHA, but many believe those standards will change in the not-too-distant future; ventilation standards already are enforced in Europe. If you don’t have protocols to remove dust, the detrimental health effects undoubtedly will impede productivity, worker satisfaction and overall efficiency. If your employees are unable to function, so are you.

Preventative Maintenance Procedures

Cleaning the physical space of your roastery includes daily sweeping and mopping, wiping down surfaces, and vacuuming out the cyclone and chaff tray. Remember, chaff collectors often contain hot embers. Prior to vacuuming, make it a habit to spray the chaff with water, or invest in a heat-resistant metal ash vacuum. Once a week, go further into your space and wipe down walls; clean any floor drains, the tri-sink, the hand-washing sink and the mop sink; generally tidy up green and roasted storage and processing areas; and disassemble and deep clean the cooling tray.

As roasters, flame as a heat source is our best friend, but like a horrible houseguest, unwanted flame quickly can become a serious problem. Chaff, dust and creosote are all potentially flammable. Despite your best cleaning and maintenance efforts, thermal events will happen — like when your electricity fails coming into first crack and the coffee burns, sitting motionless on the bottom of the hot drum. Plan and document your “immediate actions” in advance. In addition to routine cleaning, install and maintain fire extinguishers between the roaster and the exits, and make sure your facility is prepared for the worst.

Coffee dust, condensed coffee oil and chaff accumulate and build up in ductwork. This blockage reduces airflow such that minor accretion can quickly cascade into major problems. Reduced airflow decreases heat transfer to the coffee and increases chaff buildup, creating inconsistent airflow and risk of fire. Modular venting that is easily disassembled without tools can make maintenance easier and reduce the likelihood of fire. It also reassembles easily enough that, as your business grows, you can move your entire roasting operation without having to completely rethink venting.

How frequently you’ll need to clean your venting and all its components will depend on a host of variables, including roast level, how much and how often you roast and, of course, the type of roaster and venting. Anything more than about one-eighth-inch buildup on internal fan and ductwork surfaces should be removed immediately. Initially, a monthly venting inspection will help you determine an efficient schedule.

The best time to develop your roaster and facility maintenance plan is right after your first roaster cleaning. The first day after cleaning will be the beginning of your maintenance cycle. You can track the buildup in your machine daily and/or weekly to determine the exact amount of hours/roasts between cleanings. Not all duct work will build up creosote at the same rate. You’ll need to find the place or places where buildup occurs most quickly; that location will set the pace. When that location is in need of cleaning, clean your roaster completely.

An infrared thermometer can help you fine-tune your cleaning schedule. Choose six spots on your machine, two of them motors, to measure weekly, and document your findings. (Be sure to take measurements at a consistent time, such as right after the first or last roast of the day.) Temperature increases indicate areas where buildup has occurred. This is especially helpful on large roasting machines with massive ductwork, as it allows you to monitor the system without taking it apart for a visual inspection. Staying on top of your cleaning cycle will improve overall cup quality, limit fire risk, and extend the life of your roaster’s parts.

Keep in mind that you’ll need a reliable source of consumable parts. Stocking a couple of extra bearings, couplers, O-rings and fuses can save you a lot of stress and, more importantly, minimize machine downtime. You’ll also need appropriate cleaning tools, including a broad array of scrapers, brushes, power tools and vacuums. Once the roaster is clean, it’s crucial to lubricate moving parts (like bearings) with a high-drop-point grease. The high drop point (at least 500 degrees F) is essential, as it prevents grease from dripping into your beautifully roasted coffee. It’s difficult to say exactly how often to grease bearings: If you wait until you hear the bearings rub, it’s too late, but over-lubricating can cause the bearings to fail. Consult the manufacturer’s suggestion and inspect your bearings every time you turn the roaster on. You’ll soon have a feel for how often they need attention.

The Bottom Line

An organized, clean roastery with conscientious, well-trained employees runs like a well-oiled machine. Create a maintenance plan and stick to it. Document daily, weekly, monthly and quarterly tasks. The consistency and quality of your coffee depends inextricably on upholding your standards and procedures. Rules and procedures to ensure employee safety should be in place before you open your doors. Whether it’s keeping them safe from green coffee dust or the dangers of industrial machinery, it is your responsibility as a business owner to make sure all potential hazards are accounted for and addressed.

Instituting plans, procedures and standards also makes it easier — and safer — to grow your company.

Die Entscheidung hat die Gig-Economy durcheinandergewirbelt, zeigt aber auch unerwartete Auswirkungen, beispielsweise in Friseursalons und in der Erotikbranche, wo Arbeiter traditionell nicht als Angestellte gelten.

In örtlichen Clubs führt der Schritt, Tänzer in Angestellte umzuwandeln, zu einer Abwanderung, und viele von ihnen verlassen die Einrichtungen in San Francisco.

„Dieses ganze Geschäft wird völlig ruiniert sein. Eine Tänzerin im Gold Club, die darum bat, Mary genannt zu werden, sagte, es sei üblich gewesen, dass Tänzer pro Schicht durchschnittlich etwa 1.000 US-Dollar an Tänzen verkauften und 750 US-Dollar behielten.

South San Francisco home owners will now need to bring their sewer lateral lines up to code before selling their homes, following a City Council vote establishing the new rule.

Sewer laterals are the pipes that connect toilets and drains from private properties to the city’s main sewer lines. The city estimated more than a third of houses in the city had such pipes that were at risk of failure and would likely be affected.

“These provisions help to ensure that the new property owner is not stuck with an unanticipated costly repair,” said Public Works Director Eunejune Kim. “We estimate that 35% of residents have orangeburg sewer laterals in our city, and those are the ones that have that material that is basically paper and tar that are beyond their useful life.”

Kim said the city had worked with the San Mateo County Association of Realtors to draft the ordinance such that it “exports expedient real estate transactions while protecting our environment and our community.”

The rule puts the city in compliance with a regional water board requirement for cities that discharge into the San Francisco Bay, according to City Manager Mike Futrell.

Council member Mark Addiego estimated replacing the pipe can cost upwards of $15,000. He requested the city also look at ways to connect multiple nearby property owners who need the pipes replaced as a means of reducing individual costs as well as mitigating disruptions to road paving. He pointed out the task usually entails tearing up a portion of the street.

“I have always thought this was the least we could do at the point of sale,” he said. “We probably know from permits where these are failing, and anything that was built in the ’50s and ’60s and expected to last 50 years is decades beyond that currently.”

Kim said most homes that have undergone major renovations or rebuilds have been brought up to code, but “those homes that haven’t done any major triggering events, a lot of them haven’t been inspected for a very long time. This is hoping to capture those that are going through the sale process.”

San Mateo, San Bruno, Millbrae and Burlingame are among other cities in the county that have passed similar ordinances in recent years. Some cities have rebate programs to help offset costs.

Around 20 displaced live-aboard residents have moved their vessels from Oyster Cove Marina to Oyster Point Marina in South San Francisco, yet, several live-aboards still remain as the city and two agencies guide the residents through the process.

The move comes after Kilroy Realty, which purchased the Oyster Cove Marina in 2018, gave the slip owners until Oct. 15 to leave. The Southern California-based developer is currently in the midst of building 3 million square feet of office and research space on the land.

Soon after, the city and the Bay Conservation and Development Commission decided, at a September meeting, that the displaced residents could temporarily move to the adjacent city-owned Oyster Point Marina as the live-aboards find a permanent home. BCDC is a regional agency that oversees all development on the Bay.

The San Mateo County Harbor District, which operates the Oyster Point Marina, has inspected 39 vessels and passed them as seaworthy as part of the process when moving into the harbor.

One vessel didn’t pass and the city of South San Francisco is working with that individual to assist them, Harbor District General Manager Jim Pruett said.

“We were surprised that the overall condition of the vessels were good,” Pruett said.

As of last week, 11 residents have paid for the live-aboard status fee, 10 are scheduled for inspections and eight have incomplete applications. The Harbor District is assisting the individuals to complete the process, Pruett said.

The residents are welcome to stay at Oyster Point Marina until April 1 or have a verifiable plan to depart in the next few months. The BCDC will order the residents out of the harbor if they do not leave by Oct. 1, 2023.

“This is a potential homeless problem for some of these folks,” Harbor District Commissioner Edmundo Larenas said at an Oct. 19 meetings.

The city is working with a relocation expert to understand each person’s needs and find them permanent housing.

The 455-slip Oyster Point Marina is operated by the San Mateo County Harbor District. It is allocated 10% of its slips for live-aboard residents. The marina contains 29 live-aboards and is slated to have an additional 11 live-aboards filling the additional spots from the waitlist soon. While the displaced live-aboards moving to the marina will exceed the 10% compliance for Oyster Point Marina, the BCDC said it would not enforce the issue over the next year, according to a previous staff report.

The BCDC made the decision after concerns were raised by live-aboard residents who felt the deadline was not enough time to find a permanent residency.

Residential uses of the Bay are not consistent with the McAteer-Petris Act, which launched the BCDC in 1965, or the public trust, which establishes that certain natural resources are set aside for use by all the public, because it is neither a “water -oriented” use, nor is it in furtherance of public trust needs, according to a previous report.

South San Francisco Council member Mark Addiego, also a member of the BCDC, previously said that the goal is to help give the live-aboard residents enough time to find a permanent home.

“Even though it’s BCDC and their charge is to protect the Bay. … Everybody is dialed into the fact that, ‘hey, this is housing for these people and, without this, what’s going to happen to them?’” Addiego said.

The BCDC’s biggest concern is the live-aboards would be forced to anchor out, meaning their boats would be outside the marinas, which is harmful to the environment and dangerous for boaters.

South San Francisco officials announced the city has launched an automated license plate recognition program with 28 solar-powered cameras installed at key public locations, as a way to help solve increased property crimes in the hotel corridor.

“The use of this technology has already proven to be a game changer in the fight against crime and a valuable tool for our officers to help solve otherwise difficult-to-solve cases,” Police Chief Scott Campbell said in a press release. “The safety of our residents and visitors is paramount and the investment in this program shows how committed we are to keeping South San Francisco a safe place.”

The cameras are built by Flock Safety, a public safety technology company that helps neighborhoods, communities and law enforcement work together to fight crime. Flock Safety ALPR cameras help law enforcement investigate crime by providing objective evidence — license plates and vehicle characteristics, according to the city.

The South San Francisco Police Department will maintain an updated policy around usage of the ALPR system. Each search requires a justification, and the data is never sold or shared with third parties. The cameras will be used to solve and reduce property and violent crime and are not intended for minor traffic or parking violations, according to the city.

Flock Safety cameras are in use in more than 2,000 cities across 40 states, and the company works with thousands of law enforcement agencies. Law enforcement have reported crime reductions of up to 70% when deploying Flock Safety in their communities, according to the city.
