<p>While handymen can handle many household repairs, they might not be licensed for some projects, like plumbing or electrical work.</p>
<p>If he or she isn&#8217;t licensed, hire a specialized contractor who is, or you could be liable for damages.  Or, if you try to sell the home, you could pay more to fix the issue so it meets local code requirements.</p>
<p>Large projects that take time, machinery and multiple workers, such as a kitchen remodel or home addition, often require a general contractor&#8217;s license.  These projects often necessitate multiple types of licensing and levels of expertise.</p>
<p>A qualified handyman, though, can often tackle in one visit several smaller projects that don&#8217;t require licensing.</p>
<p>“A remodeling contractor and handyman are essentially the same thing in terms of ability,” says Dirk Hoerr, president of Budget Right Kitchens in Oak Park, Ill. “Where a remodeling contractor and a handyman typically differ is the size and the scope of the work they perform.”</p>
<p>  THE HANDYMAN CAN </p>
<p>Handymen usually charge by the day or hour.  They&#8217;re often cheaper than a contractor because most small projects don&#8217;t require multiple workers, and usually don&#8217;t have much overhead cost.</p>
<p>Some states limit how much a contractor can do.  In California, a handyman can perform up to $500 of work, including parts and labor.  Because California doesn&#8217;t offer specific licensing for handymen, any handyman who wants to surpass that limit must hold state licensing in the area of ​​work he or she is doing.  For example, a handyperson who does a bathroom remodel with minor <a class="wpil_keyword_link" href="https://losgatosnewsandevents.com/san-francisco-recycled-water-program-is-performative-environmentalism/"   title="plumbing" data-wpil-keyword-link="linked">plumbing</a> work and floor installation would have to hold both plumbing and flooring contractor licenses to charge more than $500 for that project.</p>
<p>The cost of a handyman project can range from $75 to $5,000 or more, depending on the scope, but many are as low as $50 to $400, according to member reports.</p>
<p>  TIPS FOR HIRING A HANDYMAN OR CONTRACTOR </p>
<p>Before hiring, interview several candidates.  For handymen, pick one who you&#8217;re comfortable with, because you&#8217;ll be working closely with them around the house.</p>
<p>Be wary of any handyman or contractor who asks for full payment before doing any work.  Ask for a written agreement that details the job, the cost and the payment schedule, and make sure to get a guarantee in writing.</p>
<p>Do your homework when hiring a contractor, especially since you may spend a lot of money on a project.</p>
<p>Home improvement experts say to get at least three bids.  Because some contractors mark up the cost of materials, you may want to call the supplier to determine the cost of supplies to see if the contractor was reasonable.</p>
<p>Paying attention to how long it took the contractor to come up with the estimate is also important.  If he or she says they&#8217;ll get it to you Monday but you end up waiting until Thursday, that could be a reflection of how they&#8217;ll perform the job.</p>

<p>A Nevada handyman convicted of strangling to death an 81-year-old man in the bedroom of a Newport Beach home was sentenced Monday, May 23, to 25 years to life in prison.</p>
<p>Anthony Thomas Garcia, 63, continued to profess his innocence during his sentencing hearing in a Santa Ana courtroom, a little more than a year after an Orange County Superior Court jury found him guilty of first-degree murder for the April 11, 2015, slaying of Abelardo Lopez Station.</p>
<p>Garcia&#8217;s conviction came at the end of his second trial;  an earlier jury did not reach a verdict.  The second jury found the killing was not carried out for financial gain, which had been alleged by prosecutors and could have led to a sentence of life without the possibility of parole.</p>
<p>On Monday, Garcia told Orange County Superior Court Judge Sheila Hanson that his conviction was a &#8220;failure of the justice system. &#8230;</p>
<p>&#8220;I have been wrongly convicted of a crime I did not commit,&#8221; Garcia said.  “I am an innocent man.  I have always been an innocent man.&#8221;</p>
<p>Estacion&#8217;s killing came in the midst of an ugly fight over the estate of Dortha Lamb, Estacion&#8217;s dying wife who has since died.  Garcia is the former boyfriend of Lamb&#8217;s granddaughter and two of Garcia&#8217;s daughters are Lamb&#8217;s great-granddaughters.</p>
<p>Lamb was a self-made woman who owned valuable real estate in Newport Beach, San Clemente and Costa Mesa.  She had been with Estacion for more than 20 years, marrying him shortly before his death.  At the time, Lamb was dying from terminal cancer and suffering from dementia.</p>
<p>Garcia and some of Lamb&#8217;s relatives apparently believed Estacion was abusing Lamb and taking advantage of her health issues to siphon money from her accounts.  According to testimony during the trials, Garcia had told others he wanted to kill Estacion.</p>
<p>Lamb&#8217;s family got her out of the Newport Beach home she shared with Estacion, and went to court to try to get Estacion kicked out of the residence.</p>
<p>A judge delayed a decision on whether to approve a temporary restraining order against Estacion.  Hours later, someone entered the Newport Beach home, cut the power and smothered, struck and strangled Estacion.</p>
<p>Prosecutors accused Garcia of driving from Carson City to Newport Beach to kill Estacion, alleging he then immediately drove back to Nevada.  They also alleged he left his cell phone with his adult daughter, Samantha Garcia, to make it look like he had stayed in Nevada.</p>
<p>Samantha Garcia initially told investigators she had her father&#8217;s cell phone the night of the killing and sent fake text conversations between his cell phone and hers.  But during both trials the daughter recanted those earlier claims, alleging detectives pressured her to lie about having the cell phone.</p>
<p>During the trials, Garcia&#8217;s attorney, Alisha Montoro, described him as a non-violent, devoted family man who lived a simple life.  The defense attorney denied the allegations by prosecutors that Garcia believed his daughter&#8217;s were entitled to Lamb&#8217;s money.  She said Garcia wasn&#8217;t even in California the night of the killings.</p>
<p>During the sentencing, Clara Sanchez, Garcia&#8217;s sister, described him as funny, kind and unselfish, adding that he is “generous and giving to a fault.”  She denied that he has ever been “a violent or aggressive human being.  &#8230;</p>
<p>&#8220;We are all so proud that he has been able to survive in an unfair and prejudiced judicial system,&#8221; Sanchez told the judge.</p>
<p>The defense attorney unsuccessfully requested a new trial, alleging, among other things, that some jurors had fallen asleep during the second trial and that a juror had cited their own medical experience to claim the death could only have been a homicide.</p>
<p>The judge described the allegations of jurors falling asleep as “not credible” and said the discussion about the cause of death appears to have been based on opinions formed from courtroom testimony, not outside evidence</p>
<p>&#8220;Nothing I say will make this feel better for Mr Garcia or Mr Garcia&#8217;s family,&#8221; Judge Hanson said.  &#8220;But make no mistake, I would not proceed with sentencing if in the court&#8217;s view Mr. Garcia was an innocent man.&#8221;</p>

<p>The number of winter heating aid applications received so far has jumped 130 percent from the same time last year, according to Orange County Department of Social Services Commissioner Darcie Miller.</p>
<p>The Home Energy Assistance Program, or HEAP, is a federal aid program that helps eligible residents heat and cool their homes.</p>
<p>In November—the opening month of the winter season—1,429 people applied, compared to 615 last year.</p>
<p>&#8220;This is a significant increase in our first month of activity,&#8221; Miller told The Epoch Times on Dec.  9. &#8220;People are trying to pay for higher priced groceries, fuel, higher rents, and there are a lot of concerns about the costs for home heating fuel.&#8221;</p>
<p>&#8220;This is a difficult time for our community, and people are looking for help,&#8221; Miller said.</p>
<p>For residents already on government aid programs such as Supplemental Nutrition Assistance and Temporary Assistance, they will get automatic pre-applications to HEAP based on eligibility—and that number has increased too, according to Miller.</p>
<p>Combining both, the total HEAP applications reach above 4,000.</p>
<p>Miller adds that the opening month typically sees the greatest number of applications and that it is still too early to predict the rest of the season.</p>
<p>In a typical year, the department receives between 11,000 and 12,000 HEAP applications;  the federal payout, including benefits to residents and payments to the county for administering the program, stands between seven and eight million, she said.</p>

<p>As the interest in aid programs rises, the volume of inquiry calls also increases.  One of the primary hotlines managed by the department averages 1,400 calls a day, compared to around 800 in the past seasons, Miller said.</p>
<p>Aside from regular benefit inquiries, she also noticed an increase in emergency calls from people who need immediate help to prevent a shutoff.</p>
<p>Currently, the department relies on staff reassignment and overtime to process the increased workload.</p>
<p>“Our community is looking for help, and we are just doing what we can to manage the influx of applications and be as supportive as we can,” Miller said.  &#8220;The challenge, though, is that not everyone will be eligible.&#8221;</p>
<p>HEAP money is granted based on several factors, including income, household size, the primary heating source, and whether there is a household member who is under age 6, over age 60, or disabled.</p>

<p>Qualified heating sources include electricity, gas, oil, coal, propane, wood or wood pellets, kerosene, and corn.</p>
<p>Applicants may take a pre-application survey on the website www.mybenefits.ny.gov to determine eligibility.</p>
<h2>County Fuel Fund</h2>
<p>Those who do not qualify for HEAP can turn to the Orange County Fuel Fund, which has a lower income threshold than the federal program.</p>
<p>For example, for a family of four, the maximum monthly income is $5,485 for HEAP but $6,582 for the county program.</p>
<p>On Dec  1, the county legislature approved an additional $60,000 for the fuel fund, bringing the total up to $100,000.</p>
<p>Miller said of the legislative move, &#8220;It is their acknowledgment that people that are just a bit over eligibility are still going to have a significant need.&#8221;</p>

<p>A. Chimney cleaning costs depend on several factors.</p>
<p>What type of chimney do you need a chimney sweep to inspect?  Hiring someone to clean a boiler chimney can cost as little as $40.  Full-size chimneys stemming from a wood-burning fireplace, however, typically cost at least $100 to $150.</p>
<p>Certain situations can also drive up the cost.  If your roof provides limited accessibility, if the chimney sweep needs to use special tools or if the sweep needs to remove animals (living or dead) from the chimney, expect to pay up to about $350.</p>
<p>However, don&#8217;t let a potentially high price tag stop you from hiring someone to complete the job.  Neglecting your fireplace could prove much more costly.</p>
<p>  IMPORTANCE OF CHIMNEY CLEANING </p>
<p>Chimney fires commonly result from creosote buildup.  Creosote, which is extremely combustible, populates in most chimneys when wood burns.  Regular chimney cleanings remove creosote, eliminating that as a cause of chimney fires.</p>
<p>According to a report released by the National Fire Protection Association in 2016, home heating equipment accounted for 16 percent of home fires and 19 percent of home fire deaths from 2009 to 2013.</p>
<p>Thirty percent of those fires resulted from failure to clean equipment, including chimneys.</p>
<p>  WHAT TO EXPECT FROM A CHIMNEY SWEEP AND INSPECTION </p>
<p>Prior to a cleaning, a sweep may want to inspect your chimney for any damage.  Expect the inspection to include a thorough examination of the chimney liners, smoke chamber, chimney exterior and firebox.  An inspection can usually identify structural problems and water damage.</p>
<p>During the cleaning, a sweep uses a chimney brush or vacuum to clear out soot and creosote.  Chimney sweeps should also lay down floor coverings before starting to minimize the mess caused by the cleaning.</p>

<p>A Nevada handyman convicted of strangling to death an 81-year-old man in the bedroom of a Newport Beach home was sentenced Monday, May 23, to 25 years to life in prison.</p>
<p>Anthony Thomas Garcia, 63, continued to profess his innocence during his sentencing hearing in a Santa Ana courtroom, a little more than a year after an Orange County Superior Court jury found him guilty of first-degree murder for the April 11, 2015, slaying of Abelardo Lopez Station.</p>
<p>Garcia&#8217;s conviction came at the end of his second trial;  an earlier jury did not reach a verdict.  The second jury found the killing was not carried out for financial gain, which had been alleged by prosecutors and could have led to a sentence of life without the possibility of parole.</p>
<p>On Monday, Garcia told Orange County Superior Court Judge Sheila Hanson that his conviction was a &#8220;failure of the justice system. &#8230;</p>
<p>&#8220;I have been wrongly convicted of a crime I did not commit,&#8221; Garcia said.  “I am an innocent man.  I have always been an innocent man.&#8221;</p>
<p>Estacion&#8217;s killing came in the midst of an ugly fight over the estate of Dortha Lamb, Estacion&#8217;s dying wife who has since died.  Garcia is the former boyfriend of Lamb&#8217;s granddaughter and two of Garcia&#8217;s daughters are Lamb&#8217;s great-granddaughters.</p>
<p>Lamb was a self-made woman who owned valuable real estate in Newport Beach, San Clemente and Costa Mesa.  She had been with Estacion for more than 20 years, marrying him shortly before his death.  At the time, Lamb was dying from terminal cancer and suffering from dementia.</p>
<p>Garcia and some of Lamb&#8217;s relatives apparently believed Estacion was abusing Lamb and taking advantage of her health issues to siphon money from her accounts.  According to testimony during the trials, Garcia had told others he wanted to kill Estacion.</p>
<p>Lamb&#8217;s family got her out of the Newport Beach home she shared with Estacion, and went to court to try to get Estacion kicked out of the residence.</p>
<p>A judge delayed a decision on whether to approve a temporary restraining order against Estacion.  Hours later, someone entered the Newport Beach home, cut the power and smothered, struck and strangled Estacion.</p>
<p>Prosecutors accused Garcia of driving from Carson City to Newport Beach to kill Estacion, alleging he then immediately drove back to Nevada.  They also alleged he left his cell phone with his adult daughter, Samantha Garcia, to make it look like he had stayed in Nevada.</p>
<p>Samantha Garcia initially told investigators she had her father&#8217;s cell phone the night of the killing and sent fake text conversations between his cell phone and hers.  But during both trials the daughter recanted those earlier claims, alleging detectives pressured her to lie about having the cell phone.</p>
<p>During the trials, Garcia&#8217;s attorney, Alisha Montoro, described him as a non-violent, devoted family man who lived a simple life.  The defense attorney denied the allegations by prosecutors that Garcia believed his daughter&#8217;s were entitled to Lamb&#8217;s money.  She said Garcia wasn&#8217;t even in California the night of the killings.</p>
<p>During the sentencing, Clara Sanchez, Garcia&#8217;s sister, described him as funny, kind and unselfish, adding that he is “generous and giving to a fault.”  She denied that he has ever been “a violent or aggressive human being.  &#8230;</p>
<p>&#8220;We are all so proud that he has been able to survive in an unfair and prejudiced judicial system,&#8221; Sanchez told the judge.</p>
<p>The defense attorney unsuccessfully requested a new trial, alleging, among other things, that some jurors had fallen asleep during the second trial and that a juror had cited their own medical experience to claim the death could only have been a homicide.</p>
<p>The judge described the allegations of jurors falling asleep as “not credible” and said the discussion about the cause of death appears to have been based on opinions formed from courtroom testimony, not outside evidence</p>
<p>&#8220;Nothing I say will make this feel better for Mr Garcia or Mr Garcia&#8217;s family,&#8221; Judge Hanson said.  &#8220;But make no mistake, I would not proceed with sentencing if in the court&#8217;s view Mr. Garcia was an innocent man.&#8221;</p>

<p>Q. How much does the chimney cleaning cost?</p>
<p>A. The cost of chimney cleaning depends on several factors.</p>
<p>What type of chimney does a chimney sweep have to inspect?  Hiring someone to clean a boiler flue can cost as little as $40.  However, full-size chimneys that come from a wood-burning fireplace usually cost at least $100 to $150.</p>
<p>Certain situations can also drive up costs.  If your roof has limited access, requires the chimney sweep to use special tools, or has to remove animals (live or dead) from the chimney, you can expect to pay up to $350.</p>
<p>However, don&#8217;t let the potentially high price tag put you off hiring someone to get the job done.  Neglecting your chimney could prove to be much more costly.</p>
<p>    IMPORTANCE OF CHIMNEY CLEANING </p>
<p>Chimney fires often result from creosote buildup.  Creosote, which is extremely flammable, colonizes most chimneys when wood is burning.  Regular chimney sweeps remove creosote and eliminate it as a cause of chimney fires.</p>
<p>According to a report released in 2016 by the National Fire Protection Association, from 2009 to 2013, 16 percent of home fires and 19 percent of home fire deaths were attributed to home heaters.</p>
<p>Thirty percent of these fires are due to appliances, including chimneys, not being cleaned.</p>
<p>    WHAT TO EXPECT FROM A CHIMNEY SWEEP AND INSPECTION </p>
<p>Before cleaning, a sweeper may want to inspect your chimney for any damage.  Expect the inspection to include a thorough examination of the chimney liners, smokebox, chimney exterior, and firebox.  An inspection can usually detect structural problems and water damage.</p>
<p>During cleaning, a sweeper uses a chimney brush or vacuum to remove soot and creosote.  Chimney sweeps should also lay floor coverings before they start cleaning.</p>

<p>There have been reports of over 28 major fires across California that experienced a historic heat wave with 14,000 firefighters fighting the fires.</p>
<p>On Wednesday, high winds blew smoke and ash from northern parts of the state, causing residents of the San Francisco area to wake up to dark skies, some thinking it was still night.</p>
<p>In California, wildfires burned more than 2.5 million acres this year.  As the fires continue to burn, forecasters expect similar conditions in the coming days.</p>

										<content:encoded><![CDATA[<p>SAN FRANCISCO (KGO) &#8211; The Bay Area wasn&#8217;t quick to forget one of the most memorable weather events of its life.</p>
<p>On Thursday, the one-year anniversary was celebrated when the region&#8217;s sunrise turned the entire sky a deep orange from the smoke from the historic California wildfires of 2020.</p>
<p>Click the video above to view a photo album of some of the best-put together photos of the day.  A year later, the extreme risk of fire persists.</p>

<p>If you thought the sky looked apocalyptic from the ground this morning, it&#8217;s somehow even more sinister from the sky.</p>
<p>ABC7 meteorologist Drew Tuma warned of the danger of thunderstorms that sweep through the Bay Area.  The highest risk would be between 10 p.m. tonight and 2 a.m. Friday morning.</p>
<p>However, it is not expected to get as bad as August 2020 when dry lightning storms ignited more than 500 forest fires across Northern California.</p>

<p>A nationwide Flex Alert has also been extended until Thursday night, said the Californian ISO.</p>

<p>There is a new starting angle at Dodger Stadium.  It catapults Trea Turner around four bases that have never appeared so close together before.
</p>
<p>The Dodgers knew that Turner would be a useful runner in the points position.  In two games they learned that when he gets into a running position, he is a goalscorer.
</p>
<p>On Saturday night he started with a walk and whizzed around in Max Muncy&#8217;s double punch to score.  On Sunday afternoon he had another run for the Dodgers before they went out, with a double that preceded Muncy&#8217;s single.
</p>
<p>But Turner saved his most Olympic performance for the second inning.  He drew a walk from the Angels&#8217; Reid Detmers.  He was gone and running when AJ Pollock dribbled a grounder out of David Fletcher&#8217;s glove.  It didn&#8217;t get very far, but Turner saw no reason to stop.  He scored from first base a goal that was little more than an infield single.  The Dodgers eventually won 8-2. 	</p>
<p>Can a pair of wing feet change the operating system of a club?  Well, in that first inning, AJ Pollock and Justin Turner double steals.  Not everyone was sure the Dodgers knew it was legal.
</p>
<p>The Dodgers still prefer the 360-foot trot and most of all prefer to see Cody Bellinger rediscover this art, as he did on Saturday and Sunday.  But when Mookie Betts returns on Tuesday, her top speed in the National League will be unmatched.
</p>
<p>When you&#8217;re 1-12 in extra inning games, 13-20 in one-run games, and 3-8 in walk-off games, and you&#8217;re leaving San Francisco behind in a desperate race to win the national team, League West and avoid the wildcard playoff game, these microwave runs are precious possessions.
</p>
<p>And this was the traumatic part of the July 30th deal for Washington fans.  They thought they could lose Max Scherzer, who is 37 years old and is eligible for the free agency.  They were taken by surprise by the loss of Turner, who is 28 years old, was runner-up for NL Rookie of the Year when Corey Seager won it, and is under contract until 2022.
</p>
<p>Out of consideration for Seager, Turner plays second base.  He was playing outfield in Washington when Daniel Murphy had to be on the line-up.  He&#8217;s the first classic leadoff man the Dodgers had since Brett Butler, and one of the few left in baseball, perhaps the only sport in the world that actively devalued speed. 	</p>
<p>&#8220;It creates tension,&#8221; said Roberts of Turner.  “When he scored in that game that Fletcher shot out, it was dynamic, right there.  Just the energy he brings is contagious. &#8221;
</p>
<p>We haven&#8217;t seen Turner attempt a triple, reputedly the most exciting game in baseball, before the deliberate path without pitch came.  Turner has 37 three-base hits in his career.  The Dodgers have 19 in 112 games this season, which incredibly ranks third in the National League.  The Mets have six.
</p>
<p>Turner is not just a pepper shaker.  He has beaten over .500 in each of his last three seasons.  He was 1.70 m tall when he walked into Park Vista High in West Palm Beach, and he went to North Carolina state, the only major school that looked at him seriously.  In his freshman year, he stole 57 bases, surpassing the total of 158 Division I teams.

<p>Turner also fulfills a need with his .402 average against left-handed pitch.  This worrying area is brought up by Albert Pujols, who grinded a 2-run homer just minutes after J. Turner suffered a groin injury and had to walk.  Detmers became the 440th jug that Pujols trotted around.  More importantly, Pujols hits .308 of left-handers and has undergone 10 of his 14 home runs in 2021.

<p>This is not to question the Angels who released the Pujols to give Jared Walsh the innings he deserved.  They also saw little benefit in putting Pujols on the bench or restricting participation in important games.  But Pujols must have surprised her too.  There is no doubt that he will be playing for someone next year, and therefore less doubt that his 700th home run will take place as this was number 676.

<p>Years ago, Dee Nguyen realized that the sun might set on his foodie career because he had to focus on caring for his son.  So he had a brilliant idea: Break of Dawn.</p>
<p>The restaurant concept would only be breakfast-brunch.  This way he would not work late at night as a top chef at the Ritz-Carlton Laguna Niguel, as he used to do before.  He announced and accepted his new concept.  After a year, it became a critic&#8217;s darling.</p>

<p>It&#8217;s bittersweet that he&#8217;s closing his restaurant in Laguna Hills at the end of August, but he&#8217;s embraced a second brilliant idea: moving operations to Old Towne Orange and starting a new concept: BoD.  He will live on site, include dinner and still be able to properly take care of his son Berlin.</p>
<p>That is Nguyen&#8217;s top priority, because Berlin was born with kidney damage and complications arose.  In April 2003, he was operated on at the age of 16 months.  During the operation, his breathing tube became blocked and he was left without oxygen for at least 10 minutes.  He was in a coma for a month, suffered brain damage, and was diagnosed with cerebral palsy.</p>
<p>Even now, Berlin still needs a lot of care and attention.  Moving to Orange guarantees that his father will continue to be there for him.</p>

<p>The new location will consist of two parts, an approximately 2,000 square meter area at 171 N. Cypress St., which is intended for the restaurant, and an adjacent 950 square meter house for Nguyen&#8217;s residence.  The property is located in Old Towne, very close to the Hilbert Museum of California Art.</p>
<p>Nguyen is doing well in South County but is looking forward to the move.</p>
<p>&#8220;The reason we&#8217;ve been successful here for 14 years is because of loyalty because this is not a walk-up restaurant,&#8221; he said.  “You have to know that we exist in order to come back here.  Orange is right in the middle of Chapman University and tourism is constantly flowing through it.  So you will always have customers. &#8220;</p>
<p>Po-Sun Chen and Mark Carlos of the BrightView Design Group have designed plans that include an owner&#8217;s room, culinary garden, fruit grove with communal table, shade structure with vines and a &#8220;promenade&#8221; garden with raised planters.</p>
<p>Nguyen will work with the city commissioned by architect Susan Secoy, owner of Orange&#8217;s historic Ice House, to design the restaurant.  Construction is scheduled to start in early 2022.  Nguyen calls his style a “modern farmhouse with Eichler influences”.</p>
<p>“I told her, Susan, my house is a hipped roof house from 1905, but I love Eichler houses.  Can you integrate and manufacture this modern Eichler farmhouse for me?  So she&#8217;s building a courtyard with a tree. ”This room, which is located in the driveway between the two houses, will be the entrance to the restaurant with 50 seats.</p>
<p>She will add an orange steel wall.  &#8220;A blank space with the BoD logo on it,&#8221; said Ngyuen.  “Perfect for Instagram.  Children love this stuff. &#8220;</p>
<p>Nguyen has already started testing the steak portion of his fresh concept at pop-ups on Saturday night.  &#8220;It&#8217;s a fixed point, the same setup,&#8221; he said.  When it opens in orange, it goes one step further.  “You get a four-course meal, but you have four or five options for the steak itself.  You can choose different types of cuts at different prices. ”Along with the beef, he serves a 70 percent plant-based menu with seafood.</p>
<p>Nguyen&#8217;s menus have always been creative.  Born in Vietnam and classically trained at the California Culinary Academy in San Francisco, he layers Asian flavors and preparations on many classics of fine cuisine.  Parker House rolls are glossy glazed with a little sweetened condensed milk to give the tips the texture of a dim sum bun.  Smoked salmon, served on hearty oat pancakes, contains pickled onions that are deliciously tucked away in a banh mi.</p>
<p>But this chef also knows how to keep prices reasonable and serve home-style cooking like a hearty pan of potatoes or wild desserts like white chocolate and Basque-style parmesan cheesecake.  Some of the breakfast items will be temporarily available at the old location, which is becoming a Mexican restaurant operated by Break of Dawn employee Alejandro Cuellar.</p>
<p>In the new BoD, the fixed-price steak menu starts at $ 40, then prices vary depending on whether you choose a more unusual cut such as rib-eye or New York steak.  The meal includes soup, salad, and a side dish like french fries.  Starters and desserts are available at an additional cost.</p>
<p>The restaurant will only have about 50 seats, but Nguyen is completely satisfied with it.  &#8220;If I pay my rent and at the end of the night have my $ 10 and eat my in-n-out hamburger, I&#8217;ll be fine,&#8221; said Nguyen.  “I&#8217;m not here to make money.  I am not here to get rich.  I have never been.  Since the accident in Berlin I&#8217;ve seen life differently. &#8220;</p>
