Chef-entrepreneur Jim Stump forging forward with a brand new Los Gatos restaurant – Silicon Valley

Construction is underway, and the inaugural menu has been posted online to whet appetites.

Shepherd & Sims, a new restaurant coming to Los Gatos, is a chef-driven concept from longtime South Bay chef-entrepreneur Jim Stump — and yes, he’s forging ahead with plans during this pandemic that’s hit his three other places hard economically. He owns The Table in San Jose’s Willow Glen and Forthright Oyster Bar & Kitchen and The Vesper in Campbell.

“The pandemic will end!” Stump said. “It is a beautiful design and we are excited about it.”

Although he said Shepherd & Sims is currently on track to open in May, “the way construction goes in restaurants we will open this summer.”

This is his second foray into Los Gatos, having previously been chef and co-owner of the Los Gatos Brewing Company. Here, he takes over the Viva Los Gatos! restaurant space in the Cornerstone/Whole Foods center.

Creative farm-to-table riffs will dominate the appetizer side of the inaugural menu. Stump’s thinking of roasted cauliflower served al pastor style with pickled pineapple, smoked pico de gallo and lime crema; potato beignets with Spanish romesco; and tempura-batter broccoli with Mornay sauce and crispy prosciutto. Entrees will include miso-marinated local black cod and house-made chorizo with cowboy beans.

The restaurant’s interior design will pay homage to Los Gatos’ history with a mural and to the town’s landscape with a mixture of natural woods and organic materials, Angelique Stump said.
